Have you ever wonder why there are so many different types of eggs at your local supermarket? White eggs, brown eggs, free-run eggs, free-range eggs… the list goes on and on. But why are some more expensive than others? What are the differences? And why should you care? Isn’t an egg, just an egg…? But more importantly, is it really worth paying an extra 2-3 dollars for organic free-range eggs…? Hmmmm……………
Well, like everything in life, it’s not that simple.
To be honest, I never really gave much thought to eggs. To me, an egg is just an egg: nothing special, until I visited Japan several years ago and discovered dark orange yolk eggs. I didn’t know why, but eggs in Japan just tasted so much richer and creamier than the standard eggs back home. I noticed that all of the eggs I purchased in Japan had yolks that were deep orange. It was strange, but at the same time it was very fascinating. My original assumption was that Japanese eggs came from a different breed of chickens. Boy, was I wrong.
This got me thinking and after much googling and researching, this is what I found.
1. Brown eggs vs. White eggs
A lot of people assume that brown eggs are more nutritious and healthier than white eggs because they’re more expensive. This couldn’t be further from the truth. Did you know that “there are no significant differences in nutritional value” between a white egg and a brown egg. I didn’t know that until I read this interesting article in The New York Times titled “Don’t Judge Them by Their Shells.” According to Dr. Bui from Cornell University, the colour of the eggs is based on the breed of hens: “White-feathered chickens with white earlobes lay white eggs; red or brown ones with red earlobes lay brown eggs.” As for the difference in price, hens that lay brown-eggs tend to be larger and require more feed compared to hens that lay white eggs. Interesting… there are no real differences in nutritional value, but we, the consumers, are paying more for brown eggs…
2. Free-run vs. Free-range eggs
The names of the eggs can be misleading because eggs can’t run on their own. Hehe… dad joke.
Anyways, 90 to 95% of egg-laying hens spend their entire lives confined to wired cages. On the other hand, free-run eggs come from hens that are not confined to cages, but are allowed to roam around in the barn. Free-range eggs comes from hens that are allowed to roam around in the barn, as well as outside when weather permits. All hens eat the same type of feed, but free-range hens also eats insects and plants.
One major difference between white, free-run, and free-range eggs is the colour of the yolks. The colour of the yolk is determined by the type of feed given to the hens. Wheat-based feeds produce pale yellow yolks, while corn-based feeds produce a darker coloured yolk and so forth.
Free-range eggs tend to have a much darker yolks and may provide greater nutritional benefits. Based on the Pennsylvania State University’s research titled, “Vitamins A, E and fatty acid composition of the eggs of caged hens and pastured hens,” on average, free-range eggs contain a significantly higher levels of omega 3 fatty acids, vitamin A and E:
- 250% more omega-3 fatty acids (EPA, DPA & DHA)
- 38% more vitamin A
- 100% more vitamin E
As the saying goes, we are what we eat. This applies to chickens as well.
3. How do they taste?
Now for the most important part, how do they taste? Do organic free-range eggs taste more superior than generic white eggs?
I find the lighter-coloured yolk has a subtle sweetness and it’s lighter in richness. Whereas the darker-coloured yolk has a much richer taste and the yolk coats your mouth with every bite like peanut butter. In terms of overall taste, they all taste very similar. The differences in taste between the four types of eggs are so subtle that it’s very difficult to tell them apart.
So, do the benefits out weigh the extra cost?
It really comes down to personal preference and budget. Taste and price may vary between various brands. I would suggest that you try different varieties and pick the one you like best.
At the end of the day, eggs are delicious and they are packed with plenty of nutrition. Eggs are a very good source of high-quality protein, vitamin D, B6, B12, selenium and so much more. That being said, you don’t want to go overboard and eat 3-5 eggs per day because each egg contains about 200mg cholesterol. To stay healthy, you need to eat everything in moderation.
Tip: I recommend using generic white eggs when eggs are not the focus of the dish because it’s more practical and cheaper.
